Dates & It’s Health Benefits:
Dates are a sweet and delicious source of natural sugars and fiber, with high concentrations of potassium and vitamin A, among other vitamins and minerals. Dates can be used as a healthy alternative for sugar in sweets.
Dates Burfi:

Preparation time: 15 mins
Cook time: 10 mins
Servings: 20 Burfis
Ingredients:
Dates : 1 cup
Almonds : 1/2 cup
Cashew nuts : 1/2 cup
Raisins(Kishmish) : 1/2 cup
Ghee : 2 tbsp
Assorted nuts : 1/4 cup
Preparation Method:
1. Chop the dates into pieces and soak in hot water for 5 minutes. If the dates are seeded, remove them before use.
2. Drain the water and grind the dates with the raisins to form a coarse paste.
3. Roast the cashew nuts and almonds in a cooking pan. You can also add pistachio and walnuts. Then, powder the nuts together coarsely.
4. Roast the assorted nuts separately and chop them into small pieces.

5. Heat ghee and add the dates paste. Cook on low flame for 10 minutes while stirring it well.
6. Add the chopped and the powdered nuts. Mix them well and cook for few more minutes.
7. Remove from flame and allow it to cool.
8. In an aluminium foil sheet, coat with a layer of ghee and spread the mixture evenly. Cover it and refrigerate in the freezer for 1 hour.

9. After it hardens, cut it into square or round pieces and store it in a container in the refrigerator.
Dates burfi ready to serve!
