Easy Pumpkin Soup

Pumpkins and pumpkin soups are a powerhouse of vitamins and nutrients. It is rich in vitamin A that helps in improving eyesight.

Pumpkin soup is not only a wonderful option for anyone fighting indigestion and stomach infections, but also for those on a weight loss program.

Pumpkin Soup:
Preparation time: 5 mins 
Cook time: 20 mins
Servings: 3

Ingredients:
Yellow pumpkin : 300 gms
Onion : 1
Garlic : 5 cloves
Salt : 1 tsp
Pepper powder : 1/4 tsp
Oil : 1 tbsp
Fresh cream to garnish

Preparation Method:
1. In a kadai heat 1 tbsp oil. Add onion and saute until it shrinks, also saute the garlic cloves.
2. Now add pumpkin and saute for a few minutes. Then, add two cups of water and boil till the pumpkin gets cooked.

Allow to cool lightly.
3. Grind the boiled pumpkin with onion and garlic into a fine paste.
4. Pour the paste into a vessel and cook in medium flame.

5. Add salt and pepper powder to the paste.
6. If the cooked paste is too thick, add water as required.
7. Cook for 2 to 3 minutes and switch off the flame.
8. Pour the cooked pumpkin soup into a bowl and garnish with a tbsp of fresh cream. Add a pinch of pepper powder, if required.

Healthy pumpkin soup ready to be served!
