Sprouts Vada

Sprouts are nutritional powerhouses. They help reduce blood sugar levels and aid digestion. They are also considered potent cancer-fighting foods. There are several types of sprouts – all of them offering incredible benefits.

How to prepare sprouts?
1. Arrange separate bowls with moong beans, black chick peas and black eyed peas. You can also add other types of bean and pea seeds.
2. Wash each of the seed varieties and soak them in water overnight.
3. Next morning, drain the water and transfer the contents of each bowl separately into a clean muslin cloth. Bring the corners of the cloth to the center and tie a knot; keep it in a container and close with lid.

4. After 8 hours, you can notice the seeds sprouting. Note that black chick peas takes a day longer to sprout completely.

Sprouts Vada :
Preparation Time : 15 mins
Cooking Time : 30 mins
Servings : 30 vadas

Ingredients:
Mixed sprout : 3 cups
Green chilli : 2
Red chilli : 5
Ginger : 1 inch
Onion : 2
Carrot : 1 big
Fennel seeds (Saunf) : 1 tsp
Salt : 1 tsp
Curry leaves & Coriander leaves : 1/2 cup
Asafoetida : 1/4 tsp
Oil – for deep fry

Preparation Method:
1. Wash the bowl of mixed sprouts with water and drain.
2. Prepare a mixture of the sprouts, red chilli, green chilli, fennel seeds, ginger and salt. Grind the mixture coarsely without adding water.
3. To this paste, add – grated carrot, chopped onion, coriander leaves, curry leaves and asafoetida. You can also add chopped cabbage.

4. Mix all the ingredients well and make a fine paste.
5. Make small patties of the paste and deep fry (both sides) in oil until the patty turns a golden brown color.

Tasty and healthy sprouts vada is ready!

Sprouts vada can be served as an evening snack. It can also be served during dinner as a starter alongside soup.
