Dosa, which is made from rice and lentils is rich in carbohydrates and protein. Vegetable dosa is not only crispy & tasty, but also adds a lot more nutrients & vitamins to your appetite.

Vegetable Dosa:
Preparation Time : 15 mins
Cooking Time : 30 mins
Servings : 15 dosas
Ingredients:
Dosa batter : 5 cups
Capsicum : 2 medium sized (or) 1 cup finely chopped
Carrot : 2 (grated)
Cabbage : 1 cup finely chopped
Onion : 2 big sized (or) 1 cup finely chopped
Coriander and Mint leaves : 1 cup
Salt for veggies : 1/2 tsp
Ginger : 1 small piece (grated)
Oil : As required for the dosa
Preparation Method:
1. Add the finely chopped capsicum, cabbage, onions, grated carrot, ginger, coriander and mint leaves to the Dosa batter. 
2. Add 1/2 tsp of salt for the veggies and mix them well.
3. Heat the tawa, pour one ladle of the batter mix and spread it evenly using the back of ladle.
4. Drizzle 1/2 tsp of oil around the dosa and cook on medium heat till it becomes crispy.

5. Flip it over to the other side and drizzle another 1/2 tsp of oil.
Hot and Crispy Vegetable dosa is ready!! Serve it with sambar or chutney !!
