Rava Dosa is simple and quick to prepare, best served with sambar and chutney.

Rava Dosa :
Preparation time : 10 mins
Cooking time : 25 mins
Servings : 15 dosas
Ingredients:
Sooji/Semolina Rava : 1 cup
Rice flour : 1 cup
Wheat flour : 1/2 cup
Mustard seeds : 1/2 tsp
Jeera : 1 tsp
Urad dal : 1 tsp
Cashew nuts: 5
Green chilli : 2 (finely chopped)
Ginger : 1 inch
Curry leaves & coriander leaves : 1 cup
Curd : 1 cup
Asofetida : 1/4 tsp
Water : 2-3 cups
Oil : 1 tbsp
Salt : As needed
Preparation Method:
1. Heat 1 tbsp of oil and add mustard seeds. When it splutters, add urad dal, cashewnuts and jeera.
2. When urad dal turns brown, add green chilli, ginger, asofetida and curry leaves. Fry the mix slightly and transfer it to a bowl.
3. To the same bowl, add the rava, rice flour, wheat flour, curd and coriander leaves. Add salt as needed and mix everything by adding water.

4. To get a perfect consistency for the batter, first add 2 cups of water and mix well making sure there are no lumps formed. Rest the batter for 20 minutes.
5. If the batter is little thick, add 1 cup of water before using, to make it to a thin watery consistency.
6. Heat the tawa first and carefully pour the batter.

7. Lower the flame and cook until the dosa becomes golden and crisp. Flip the other side and cook until crisp.
Hot and crispy Rava dosa is ready to be served !!! Serve with coconut chutney or onion-tomato chutney !!
