Cabbage Pulao

Cabbage Pulao:
Preparation Time: 10 mins
Cooking Time: 30 mins
Servings: 2

Ingredients:
Cabbage : 2 cups
Cooked rice : 3 cups
Onion : 1
To Grind:
Green chilli : 2
Coconut(grated) : 1/4 cup
Coriander leaves : 1/4 cup
Garlic : 5 cloves
Ginger : 1 inch piece grated
(Can use 1tsp ginger garlic paste as an option)
For seasoning:
Mustard seeds : 1/2 tsp
Urad dal : 1 tsp
Channa dal : 1 tsp
Jeera : 1/2 tsp
Roasted peanuts : 1 tsp
Cashewnut : 6
Curry leaves : few
Salt: 1/2 tsp + 1/2 tsp
Asofetida : a pinch
Oil : 2 tbsp
Ghee : 1 tsp

Preparation Method:
Cook rice separately and allow it to cool.
To make the masala paste, grind all the ‘To Grind’ ingredients mentioned above. Add very little water and make sure the paste is thick.

1. Heat a pan, add 2 tbsp oil and temper with the above mentioned seasonings. When the dal turns red, add onion and curry leaves and saute till onion becomes translucent.
2. Add the cabbage and saute for 1 minute in low flame. Then add 1/2 tsp salt and sprinkle little water. Cover the pan. Make sure the cabbage doesn’t get burnt.

3. When the cabbage is well cooked, add the ground masala paste, add 1/2 tsp salt for the masala, fry until the cabbage is mixed well with the masala. Ensure that the raw smell of the masala is removed.

4. Now add the cooked rice, 1 tsp of ghee and mix till the cabbage is well coated with the rice.

Hot and healthy Cabbage pulao is ready !! Serve with raita !!
