Oats Idly

Goodness of Oats πŸ™‚
Oats are rich in carbs and fiber, but also higher in protein and fat than most other grains. Oats are high in the soluble fiber beta-glucan, which has numerous benefits. It helps reduce cholesterol and blood sugar levels, promotes healthy gut bacteria and boosts the feeling of fullness.

Oats Idly:
Preparation time : 20 mins
Cooking time : 15 to 20 mins
Servings : 20 pieces

Ingredients:
Oats – 2 cups
Bombay rava – 1 cup
Curd – 1 cup
Mustard seeds – 1/2 tsp
Jeera – 1 tsp
Urad dal – 1 tsp
Turmeric powder – 1/4 tsp
Carrot – 2 (grated)
Cashew nuts – 6
Green chilli – 2
Ginger – 1 small piece (grated)
Curry leaves – few
Coriander leaves – 1/2 cup
Salt – 1 tsp or required amount
Sesame oil – required amount

Preparation method:
1. Dry roast the oats and slightly powder it, as shown in the below image.

2. Heat oil in a pan, add mustard seeds, when it splutters add urad dal, cashew nuts and jeera. When the urad dal turns red, add green chilli, curry leaves and the grated ginger.

3. Add turmeric powder and saute well. Add the grated carrot and saute for two minutes.

4. To the mixture, add bombay rava and saute well.

5. Transfer this into a bowl. Add the powdered oats into this mixture, add curd, coriander leaves and salt, and mix well.
6. Add required amount of water to the mixture to make a batter similar to plain idly batter.
7. Let it sit for 20 minutes. The batter should be neither too thick nor too thin.

8. Grease idly moulds with oil and pour a ladle of batter in the mould. Steam cook for 15 minutes. After it cools, remove the idly from the mould.

Soft oats idlies are ready to be served with Chutney or Sambar!
